Start your day with this blueberry and coconut smoothie bowl

This easy vegan breakfast is full of texture and flavour. Accented with two superfoods, cacao nibs and goji berries, this easy to make dish is nutritious and tasty!

Ingredients:
Smoothie:

  • 400g frozen blueberries
  • 1 frozen banana, sliced
  • 250ml coconut milk
  • 1 tbsp agave syrup

Toppings:

  • 2 tbsp goji berries
  • 1 banana, sliced
  • 150g frozen blueberries
  • 50g granola
  • 2tbsp coconut flakes
  • 2 tbsp cacao nibs
  • 4 squares Lindt Excellence Dark Coconut
  • 4 Edible flowers

Method:

  1. Put the 400g frozen blueberries, banana, coconut milk and agave syrup into blender and pulse until smooth.
  2. Divide the smoothie between two serving bowls.
  3. Top evenly with goji berries, sliced bananas, frozen blueberries, granola, coconut and cacao nibs.
  4. Garnish with 2 squares of Lindt Excellence Dark Chocolate and edible flowers, if desired.
