Recipe: Hibiscus Refresher with Solaris Tea Berry Fruity

Summer is finally here, and here at VIP, we’re all about a tasty summer drink.

One that’s delicious, fruity, and made from our favourite Irish tea brand, Solaris Tea.

Sustainably sourced, expertly blended, and award winning, Solaris Tea is created in Galway by Karin Mueller and her husband Joerg.

It’s an exciting time for the brand as they recently received their B Corp ™ Certification, and launched their first ‘as Gaeilge’ Bilingual Loose Leaf Packaging, so you can get your Solaris fix in both Irish and English. 

Solaris boasts a range of organic speciality teas, herbal teas, and premium flowering teas, all blended in Ireland.

One of our favourites has got to be Organic Berry Fruity. It’s zesty, it’s exhilarating, and it makes the most delicious summer drink.

Here’s how to make it.

Hibiscus Refresher with Berry Fruity

Ingredients:

  • 2 Solaris Berry Fruity Tea Bags (or 1 tbsp Loose Leaf) – Blend contains: Rooibos, Hibiscus, Blueberries, Lemongrass, & Orange Peel
  • 1 cup boiling water
  • 1/4 cup raw apple juice
  • 1 tsp raw local honey (optional, for natural sweetness)
  • A squeeze of fresh lemon
  • A pinch of sea salt (to enhance the botanicals)
  • Garnish: Dried rose petals or extra hibiscus, fresh mint sprigs, and plenty of ice.

Directions:

  • Brew the Base: Steep the Berry Fruity tea and dried rose petals in 1 cup of boiling water for 5-7 minutes.
  • Infuse the Flavour: Strain the tea into a large glass or mason jar. While still warm, stir in the honey, lemon juice, apple juice, and a pinch of salt until well combined.
  • Chill & Serve: Allow the mixture to cool slightly. Fill a tall ribbed glass with generous amounts of ice and pour the infusion over the top.
  • The Finishing Touch: Garnish with a fresh mint sprig and a sprinkle of rose petals for a romantic flair.
  • Sip, refresh, and enjoy!
