While the sun may have disappeared after it peaked out for a few days, we are seriously in a sunshine mood.
And one of the best things about summer is enjoying a delicious cocktail.
Try out these three cocktail recipes as you pretend you’re in the South of France…
Summer in the City
Enjoy a dreamy cocktail created by Darren Moore, General Manager of The Church…
Ingredients
50ml Tanqueray Gin
20ml Mango Puree
25ml Lime Cordial
10ml Orgeat Syrup (sweet, nutty flavour commonly used in classic and tropical cocktails)
Method
Shake everything together and pour through a strainer over cubed ice and top with Slimline Tonic.
Serve in a sling/tall glass, garnish with dehydrated lime and edible flower

Hugo cocktail
Ingredients
Small handful of mint leaves, plus 1 mint sprig to garnish
20 ml elderflower cordial
20 ml Slovenian gin
Ice
25 ml soda water
120 ml prosecco or sparkling wine
1 lime wedge to garnish
Method
Gently scrunch the mint in your hands to lightly bruise it, then put in the bottom of a large wine glass.
Pour over the elderflower cordial and Gordon’s London Dry Gin and leave to infuse for 1-2 mins.
Fill the glass with ice, then pour over the soda water and prosecco. Stir gently to combine.
Garnish with the lime wedge and mint sprig before serving.

Ingredients
Hendrick’s Original Gin 40ML
Lime Juice 20ML
Raspberry Syrup 10ML
Top with ginger beer
Method
Build all ingredients in a highball glass over ice cubes.
