Lili Forberg is about to release her very own cookbook and with the range of recipes already available on her Instagram they look nothing less than delicious.
With Pancake Tuesday coming up, we wanted to know all the best tips for the perfect pancakes. Lili has partnered with Homesense to inspire the nation to get ‘flipping’ and be equipped with the necessary tools and utensils that are essential to make the perfect pancake.
Lili assured us that pancakes are a very popular meal for her, “We are OBSESSED with pancakes in our house!”
What is your go-to pancake recipe? Do you have a secret ingredient?
I love fluffy American style pancakes, they’re just so versatile and can be served with so many different toppings! My secret ingredient is a tablespoon of icing sugar in the mix, it just sweetens them a bit and helps to caramelise them on the pan.
Do you have any tips for making pancakes fluffier?
With American pancakes it’s better if the mix is quite thick, that makes them rise better, and don’t forget the baking powder and baking soda especially when using buttermilk- a bit of baking soda reacts well to the acidity in the buttermilk. It makes a huge difference.
Does the size of the pan you’re using matter?
Yes! I like to use a big non stick pan for American pancakes so that I can cook three at a time, it means we can eat them sooner! Homesense has a huge selection of non stick pans which are perfect for pancakes! That’s where I got mine from.
What are some toppings people need to try this Pancake Tuesday?
You NEED to try my chocolate stuffed pancakes this Pancake Tuesday!! I show how to make them on my Instagram- but you basically freeze some melted chocolate and place it onto the pancake while cooking it on the pan. Then when you cut into the pancake it all comes out. YUM!
Any more insider tips on how to make the perfect pancake?
Don’t over whisk your batter, that’s when it will become less fluffy! No need for electric mixer – hand whisk is perfect! Leave your batter in the bowl for about 15 mins before you start cooking it for super fluffy pancakes!
Keep an eye out for the bubbles, when you see them it’s time to flip your pancake, and don’t fidget around with them, let them cook on one side, flip them once using a spatula and that’s it. If you move them around too much they don’t cook right.
Congratulations on your book! How are you feeling about its release?
It’s so exciting, I started simplifying and sharing recipes online because I just love cooking and found so many recipes were overly complicated and had ingredients that I never have at home.
I was contacted by so many people through the years who found a lot of confidence in the kitchen by using my recipes, so it’s amazing to see all those recipes in a book now, it’s a bit surreal.
Can readers expect to find a few pancake/ breakfast recipes inside?
Oh yes, there’s loads of fantastic and super easy stuff in there, and every recipe has a pic too, it’s always easier to pick a recipe to make when there’s a photo. I know that I’ll be using the book myself to help me decide what to cook, it’s great for dipping into when you don’t know what you’re in the mood for.
