The Happy Pear brothers, Stephen and David Flynn bring the healthy and delicious recipes from their buzzing Greystones cafe to paper with their cookbook, The Happy Pear.
5 minute easy Japanese Ramen
This super-easy ramen noodle recipe is perfect for the budget-conscious cooking. Ramen is the most popular dish in Japan. It’s easy, filling, comforting and can be throw together in just 5 minutes. Best served in deep bowls. Happy cooking!
Serves 2-3
3 noodle nests
1.5 litres of water
half a chili
1 piece of ginger
2 tablespoons of veg stock
3 cloves of garlic
200g oyster mushrooms or other mushrooms
4 spring onions
3 tablespoons of tamari
1 red pepper
1 fennel
1 carrot
half a head of red cabbage
120g bean sprouts

Put a flat pan and a medium sized saucepan, both on a high heat

Peel the garlic. In a blender add the garlic, ginger, water, stock, tamari and blend well and add to saucepan, along with the noodles. Cook them for 4 minutes.

Roughly chop the mushrooms, add to the frying pan along with tamari and 2 tbsp water, stirring occasionally and cook for 2-3 minutes until they smell amazing and taste fab.

Finely chop the scallions, fennel, and red pepper and finely slice the red chilli.

Grate the carrot and grate the cabbage.

When the noodles are soft, add them, along with their broth into bowls

Now layer the bowl with the prepped veg so that there is a good distribution of colour and it presents very well, top with some bean sprouts and mushrooms and finally top with a sprinkling of some of the sliced chilli. Enjoy!
