Gin is becoming increasingly popular here in Ireland and fans of the drink are always looking for the most creative and exciting gins on the market. But what could be more creative or exciting than gin packed full of flavour and wild Irish botanicals?
At Glendalough Distillery, they do just that with their incredible wild gin. To make it, they sustainably forage wild plants from the mountains around the distillery. What is picked must go fresh into the still, within hours of foraging to capture those elusive and fleeting essential oils. They are one of the only distilleries in the world to employ a full-time forager, for this very purpose.
Made in a region known as “The Garden of Ireland”, the Gin gets its flavour from wildflowers and herbs like gorse, elderflower, wood sorrel, lemon balm, watermint and sweet woodruff. It has a depth of flavour that goes far beyond the vast majority of gins.
Each tiny batch is then painstakingly slow-distilled to tease out delicate flavours and essential oils – a delicate mix of knowledge, experience and man-hours that go into each bottle.
What results is a terroir-inspired gin – A flavour of their mountain home with fresh aromas of juniper, citrus, pine like a forest clearing in Spring.
On tasting, it’s cool and mellow, rushing to nectarous Summer flowers and hints of Autumn fruits that finally give way to warm winter spices.
Each sip transports you to the Wicklow mountains.
