After many, many weeks of doing our own cooking, it can be hard to think of what kind of meals you’d like, rather than the same old thing day in and day out. So we’ve put together eight delicious recipes to give you some inspiration. From gorgeous breakfasts to look forward to and a delish chocolate cake that the whole family will enjoy.

Bacon & Egg Breakfast Sandwich – Donal Skehan

Ingredients:

  • 1 tbsp olive oil
  • 400g cherry tomatoes
  • 1 tbsp butter
  • 5 large free range eggs
  • 100g cheddar cheese, grated (optional)
  • 2 brioche buns
  • 6 slices of streaky bacon, cooked until crisp
  • Sea salt & ground black pepper

Ingredients:

  •  300g fusilli pasta
  • ½ green cabbage (shredded)
  • 4 pork sausages
  • Sea salt & black pepper
  • 50g of butter
  • Cream or creme fraiche
  • 60g of good mature cheddar or farmhouse cheese (grated)

Hummus with Smoked Salmon and Sourdough – Neven Maguire

Ingredients:

  • 400g tin of chickpeas drained and rinsed
  • 2 Italian grilled peppers, or roasted red peppers
  • 1/4 teaspoon harissa spice
  • 1/4 teaspoon ground cumin
  • 1 tsp smoked paprika
  • 2 garlic cloves, roughly chopped
  • 3 heaped tsp of tahini paste
  • Juice and zest of 1/2 lemon
  • A small handful of fresh basil
  • Sea salt and ground pepper
  • 2-3 tbsp of cold water
  • 8 cherry tomatoes, thinly sliced
  • 8 slices of sourdough or ciabatta bread, toasted
  • 160g of smoked organic salmon
  • 1 tbsp sesame seeds, toasted
  • Rocket leaves to serve

Tomato and Basil Soup – Rachel Allen

Ingredients:

  • 25g butter
  • 125g white and light green parts of spring onions, sliced
  • 1 garlic clove, chopped
  • 400g very ripe tomatoes, chopped, or 1 x 400g tin of tomatoes, chopped
  • A generous pinch of sugar (1 tsp of sugar if using a tin of tomatoes)
  • 400ml hot chicken or vegetable stock
  • 2 tbsp torn basil
  • 50ml cream
  • Sea salt and freshly ground pepper
  • To serve: a drizzle of basil pesto

  • 200g / 1 cup macaroni pasta
  • 25g / 2 tbsp butter
  • 25g / 3 tbsp flour
  • 400ml / 1 2/3 cup of milk
  • 2 tsps Dijon mustard
  • 150g / 1 1/2 cups of cheddar cheese
  • 100g / 1 cup pancetta, cooked
  • sea salt and freshly ground black pepper

Ingredients:

  • 2 chicken fillets (sliced into small strips)
  • 200g of ground almonds
  • 1/2 tsp of cumin
  • 2 eggs beaten
  • 1tsp of coconut oil
  • 4 medium-sized Maris pipers washed
  • 1 onion sliced
  • 1tbsp of coconut oil
  • 2 sprigs of rosemary
  • 2 good pinches of sea salt
  • 1tbsp of Chinese 5 spice
  • 1/2tsp of garlic powder
  • 1/2tsp of chilli powder
  • To garnish (optional): sliced red and green chill

  • 130g white all-purpose flour
  • 150g coconut sugar                   
  • 1 tsp baking powder                             
  • 40g Cacao powder                   
  • 150ml alternative milk                  
  • 180ml neutral-tasting oil – more oil                
  • 1/2 tsp pure vanilla essence       
  • 1 flax egg
