Usually, it can be hard to pull together anything other than scrambled egg or granola for breakfast during the week, but at the weekends, we have even a little extra time to make something more delish for breakfast. It makes it even better when it’s a meal that the whole family are sure to enjoy. Here are some gorgeous breakfast recipes from some of our fave Irish chefs to try out this weekend.
Bacon & Egg Breakfast Sandwich – Donal Skehan
Ingredients:
- 1 tbsp olive oil
- 400g cherry tomatoes
- 1 tbsp butter
- 5 large free-range eggs
- 100g cheddar cheese, grated (optional)
- 2 brioche buns
- 6 slices of streaky bacon, cooked until crisp
- Sea salt & ground black pepper

Fluffy Blueberry Pancakes – Clodagh McKenna
Ingredients:
- 150g/1 cup plain/all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp caster/superfine sugar
- 175ml milk
- 1 tbsp lemon juice or white wine vinegar
- 1 egg, separated
- 50g/1½ cups fresh blueberries
- 2 tbsps butter melted and an extra tbsp butter to cook the pancakes

- 4 crumpets

Ingredients:
- 2 medium-size potatoes, sliced into wedges
- 8 small sausages
- 8 large mushrooms, wiped
- 10 to 12 cherry tomatoes
- 4 eggs
- 2 tbsp rapeseed oil
- Chopped parsley, for garnishing
