Dreamy summer menus across the country for your Al Fresco dining!

The summer is almost here… and thank god for that.

Come rain or shine, it’s safe to say that we’ll be eating and dining out to our heart’s content as the weather heats up.

Thankfully, restaurants and bars have been busy putting together a whole host of delicious summer-y things for us to eat and drink.

Here are some of the best summer menus we’ve come across from around the country.

The Dylan Hotel, Dublin

You can’t spell summer without ceviche. No really, you can’t.

And the five star Dylan Hotel have got a divine scallop one on their new summer menu. There’s also a vegetable pappardelle that’s to die for.

Aniar, Galway

Summer menus aren’t just for summer. Sometimes, they’re for one night only.

On May 30th, award-winning chef Meeran Manzoor will join JP McMahon in the newly renovated Aniar to serve a menu combining the West of Ireland with Manzoor’s Tamil Nadu heritage. Divine.

Six by Nico, Dublin

The iconic Six by Nico has just announced their Mexican-inspired summer menu, available for six weeks only.

The new menu aims to transport diners from the hazy cactus deserts of Tijuana to the vibrant, bustling streets of Mexico City with each course. Spicy marg, anyone?

Marco Polo, Limerick

One of Limerick’s finest dining establishments, the team at Marco Polo has been busy crafting a new fresh and vibrant menu.

Mussels and a glass of red, please.

Fish City, Belfast

Sustainably sourced fish in the heart of Belfast? Head to Fish City, sure.

Their terrace will be open for the summer months, serving up local catches, delicious sides, and tasty drinks.

Parterre at The Johnstown Estate, Meath

The beautiful Johnstown Estate recently opened its new cocktail terrace, Parterre.

The space specialises in botanically-inspired cocktails ideal for the summer months… and very on-brand for the hotel. The Spa Serenity, anyone?

Cask, Cork

If you’re looking for a delicious cocktail, Cask is the place.

They’ve recently added a few new items to their food menu, but it’s the cocktails that are exciting us. Red Rover is an appletini “with notions.”

The Europe’s Panorama restaurant is a dream come true for any foodie – and their summer menu for this year is something to behold.

Try the mushroom and truffle risotto. You won’t regret it.

Looking for an outdoor soirée this summer? Dublin’s The Conrad’s Terrace has just had a modern makeover, and we’re only dying to go.

Their new summer menu includes a whole host of summer cocktails, as well as delicious sharing plates using only Irish produce.

Dun Laoghaire’s finest has once again announced a lovely summer menu and we’re only dying to try.

Whether you’re in the mood for a tasty marg, or a prawn pil pil, you’ll have a ball on their heated terrace this summer.

BoAnn at Trim Castle Hotel, Meath

BoAnn has just opened up in Trim Castle Hotel, and it looks beautiful.

Their new dinner menu is served from Thursday to Saturday evenings and features classic dishes with a contemporary twist – think starters like citrus-cured salmon, caviar, avocado salsa or pork belly with scallops and celeriac puree. Yum.
